My favourite recipe for kale is kale and quinoa salad. Initially noticed it on all recipes:
3 tablespoons olive oil
3/4 cup crumbled feta cheese
1 cup currants
The salad is fine cold, area temp (my preference) or scorching. I served it with some lemon pepper chicken to highlight the lemon. So delicious.
1 substantial garlic clove, minced
one cup quinoa
I just make some quinoa, then the dressing which is sooo very good, just olive oil, salt and pepper and some mustard, recipe calls for dijon, I employed creole mustard, a clove of finely chopped garlic, and some lemon juice.
Also I skipped the feta and just threw in some fruit and nut trail mix I had, cranberries, almonds, flax seeds etc. Super hassle-free and adjustable to everything you have during the house. I considering making use of couscous for it next time.
